I brought this salad to my parents house yesterday and everyone loved it! This is definitely going into the regular rotation all summer long. Think: homegrown cucumbers and tomatoes :).

Ingredients for Tomato Avocado Salad:

This salad is loaded with veggies; juicy tomatoes, crisp cucumber, creamy avocado and the cilantro and lemon juice make the whole salad so fresh and flavorful!

P.S. If you aren’t keen on cilantro, fresh dill is a good substitute

How to Make Cucumber Tomato Avocado Salad:

1. Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.

2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving toss with 1 tsp sea salt and 1/8 tsp black pepper

Avocado Salad Video Tutorial:

My husband and I ate this entire batch of cucumber tomato salad with avocado in one sitting, paired with roasted red potatoes and grilled shrimp skewers. I shoveled most of the salad into my mouth before I remembered the shrimp and potatoes on my plate; mmming and smiling all the way through. We were both smitten.

Our classic cucumber and tomato salad just got better with the addition of avocado, a lemon dressing and fresh cilantro.

Ingredients 

Servings: 4 (as a side salad)
  • 1 lb Roma tomatoes
  • 1 English cucumber
  • 1/2 medium red onion, sliced
  • 2 avocados, diced
  • 2 Tbsp extra virgin olive oil or sunflower oil
  • 2 Tbsp fresh lemon juice, (from 1 medium lemon)
  • 1/4 cup 1/2 bunch cilantro, chopped
  • 1 tsp sea salt or 3/4 tsp table salt
  • 1/8 tsp black pepper

Instructions

  • Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
  • Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice. Toss gently to combine. Just before serving, toss with 1 tsp sea salt and 1/8 tsp black pepper.

    I make that quite often, just last night as a matter of fact, I never add cilantro (wife request) and sometimes I’ll just use a vinegar oil dressing…but it’s always good no matter what!

    I make a salad very similar, just no cucumber or cilantro. The dressing I use is a garlic house dressing sold at Aldi’s. We also have this for breakfast with home style potatoes and eggs.

      Hi Ana! It will last about 5-6 hours covered and refrigerated. I would suggest omitting the salt until ready to serve since salt will cause the tomatoes to get juicy and the cucumbers to soften. Cover with plastic wrap directly over the surface of the salad to keep the avocados from discoloring – the lemon juice also helps prevent discoloring

    Love this salad! I add a little bit of honey to balance the tartness of the lemon. My favorite way to eat this is to top it with seasoned chicken breast chunks.

    I actually make this salad or similar on a regular basis. I use cherry tomatoes and instead of cilantro (I call it coriander) I use flat leaf parsley as I don’t like coriander. Lots of pepper and olive oil. This is a good low carb salad too.

      Hi Patty, this is best enjoyed fresh. The avocado will start to brown and the other veggies become mushy. I have eaten it on the second day and it was fine, but definitely not as good as fresh. It may be possible to precut the cucumbers and tomatoes the night before, then add the avocado fresh with the rest of the ingredients on the day of…

    I suggest making this several hours before serving so veggies can marinate a bit and the flavors can meld, especially the onion. Also add a splash of red wine vinegar or balsamic for more zest. Then add avocado chunks right before you serve it, not before, as it gets soggy and mushy.

    This is a wonderfully refreshing salad, especially in the summer. Such a simple brut flavorful dressing. I jazzed it up by adding salad shrimp, fresh red bell pepper and finely chopped purple cabbage. It was the main course for dinner. Absolutely delicious.

    This salad! So different from any I’ve ever had, and so good! I kept wanting more. My avocados were not the best, so I only had one to add. Then, I remembered the guacamole I had in the fridge! I just glopped some into my serving, and it tasted great, so next time, I stirred the guacamole into the salad. It mixed with the dressing and was delicious! Thanks for the recipe.

    Hello from Lancaster county, PA. You said to use “English” cucumbers. Would it work with “Amish” cucumbers? (In the Amish culture if you are not Amish you are English!)

      I didn’t know there was such a thing as Amish cucumbers. It’s just a variety of cucumber we prefer since they don’t need peeling. In the summer we use homegrown and I suppose those would be our Ukrainian cucumbers since we are Ukrainian (wink).

        An English cucumber may be the same as an Armenian cucumber. The are dull green, ridged/grooved and, like you said, don’t need peeling.

      Hi Natasha, I think avocado oil would work but keep in mind avocado oil is pretty flavorless. In contrast, extra virgin olive oil will provide another layer of good flavor to the salad :).

    This was delish and very healthy. I just added less cilantro cos I’m not a fan but I don’t mind it. As far as the mention of it not being healthy because of the salt- its untrue. If you use pink Himalayan salt , it’s very healthy. Everyone needs salt but the white stuff is bad. I love all of your recipes!

    So good! I added less salt (about a 1/4 tsp probably) and fresh cracked pepper. Also left out cilantro as I am not a fan.
    This was so good! The veggies flavors can shine through but the light dressing adds that extra something. This is going in our regular rotation!

I would suggest omitting the salt until ready to serve since salt will cause the tomatoes to get juicy and the cucumbers to soften. Cover with plastic wrap directly over the surface of the salad to keep the avocados from discoloring – the lemon juice also helps prevent discoloring

    I made this tonight minus the cilantro. The store was out. It was absolutely delicious just the way it was! I was surprised how the lemon juice and voo stayed mixed and was so yummy. With a mix of celtic sea salt and fresh ground pepper to top it off it made a complete meal on its own! This is a keeper!

    Great flavors to add together. But your comments say this recipe is “super healthy.” With 26% of the daily recommended amount of sodium per serving, I have to object. I never add salt to a salad.

    I’m certain this salad is delicious without all the salt. Perhaps you would make a minor modification to include the amount of sodium per serving if no salt is added. People can always salt it at the table if they feel they must have the taste of salt.

          Interested in your use of the term “coriander” in describing “cilantro.” Actually, they’re both from the same plant, but the Cilantro is the leaf and the Coriander is the seed, which must be ground. The flavors are both pungeant but very different.

    Loved the salad! I substituted green garden onions for the red onion (it’s what I had in my fridge), used the dill option and added small cubed pieces of a mozzarella ball I had leftover from making bruschetta. I brought it to a football-watching party and it was very well received. People loved the healthy option and its great light flavor after this past holiday heavy eating week! Definitely will make this again.

    I pretty much make this recipe every week. The other day I thought instead of adding the avocado, diced to the salad, I would just puree it up with the rest of the dressing. The avocado turns black really quickly when it is diced, so that’s why I decided to add it to the rest of the dressing. It never turned dark and you still had the wonderful taste of avocado! BTW…I only used one! Delicious!

      Hi John, I have had a salad that was on the softer side when the avocados were over-ripe. Could that have been the case? Also, it’s best to add salt to this (because of the cucumbers and tomatoes) just before serving to prevent it from getting overly juicy. I hope that helps!

    Cilantro tastes like soap to me, so I switched this up by substituting the cilantro with basil, and dressing with a good balsamic rather than lemon, olive oil, salt, pepper, a crushed garlic clove and a teaspoon of lime juice. It was fabulous!

        So delicious! I used dill instead of cilantro because that’s what I had on hand. I suggest a little less salt otherwise perfect.

    This has to be one of the most refreshing salads I’ve tasted in a long time! I use it as my go to side dish to bring to BBQs. We’ve also used it as a topping for burgers. Delicious!! ❤️

    Thanks for the suggestion to replace the cilantro. I can taste a micro amount of it and it sends me looking for a place to spit it out. It amazes me that so many professional cooks ignore the fact that a large portion of the world hates the stuff.

      One of the best salads ever. I have made this several times and it is always a hit. I am not a fan of cilantro so I have to leave it out. Very allergic and I have to screen my food for cilantro everywhere I go. Very frustrating.

    I have made this salad a number of times.I usually have to double it.Everybody loves it.I use dill weed instead of cilantro,too many at parties do not like cilantro.

    I don’t like cilantro but I love fresh basil so when mine has grown, I will add it. But made it with the rest of the ingredients and I love it!

    Natasha THANK YOU for the outstanding recipes! I come back weekly to your website. I grew up in America but love learning to cook the Russian dishes my mom used to make when I was a little girl. BUT I’m absolutely SHOCKED 😲 that you do not have Monte on here. An absolute staple in the russian-ukrainian diet. You even have aspic on here for crying out loud! Where are the Monte?!?!? I would be internally grateful to you for a step-by-step video recipe for манты. 😇

      Hi Tatyana, we don’t own the specific steamer to make manti so we stick with dumplings (pelmeni) for now 🙂 I have a recipe for the manti, I just need to get my hands on the steamer 🙂

    This was an amazing salad. Just wanted to make something simple with flavour and this salad was just that. We are in PV Mexico and so I was able to get fresh produce. I added a yellow pepper and along with the salt and pepper I also sprinkled Salsa en Polvo ( chilli ) and WOW!!! This will be our meal for the next 5 weeks we are here.

    This is a nice salad and nice photos and instructions. To add a little more flavor tho, i drizzled it in Brianna’s Strawberry Vinegrette. Turned out very yummy.

      Hi Sharon. Both of my Turkey recipes have Lemon and Parsley. Are you Referring to this Thanksgiving Turkey Recipe? Or this Juicy Roast Turkey Recipe. I would follow the same recipe instructions and temperatures but adjust the time accordingly. An 8-pound turkey will take less time than a 12-pound turkey & cooking temps based on the USDA which now says the safe poultry temp is 165˚F but the deeper thigh parts really should be at 170˚ to be fully cooked through. Once you have reduced the oven to 350˚F, you will bake about 13 min for every pound of turkey.

        Hi Natashsha, will spraying the corriander and onions with a bit of lime juice also work in keeping them from getting brown? Will advil also keep the corriander and onions from getting brown as well? Your salad sounds really good and simple.
