Breakfast Burritos Recipe (VIDEO)

Breakfast Burrito Recipe:

These breakfast burritos are crisp on the outside and filled with tender scrambled eggs, ham, and plenty of melty cheese of course. If you haven’t tried sautéing breakfast burritos, try these and you won’t want them any other way.

This breakfast burrito recipe is one of the first things I learned to cook when Vadim and I got married (16 years ago!) and they have been a family favorite ever since. Breakfast burritos are excellent with hot sauce or Roasted Salsa but they have plenty of flavor and juiciness just eaten plain.

The Best Tortillas for Breakfast Burritos:

We use medium-sized (8-inch diameter) flour tortillas to make breakfast burritos. We find it is just the right amount of dough to filling for a single serving burrito and it is still easy to wrap tightly without the contents escaping. If you prefer a larger shell, a 10″ tortilla will also work well.

Tips for Making Burritos:

  • It’s easier to roll using a fresh pack of unopened tortillas and keep them closed until ready to use to prevent drying and cracking.
  • To keep older tortillas pliable and prevent cracking, stack between two barely damp paper towels, microwave 30 seconds and keep covered until ready to roll.
  • Do not overstuff or the burritos will be difficult to roll.

Variations for Breakfast Burritos:

There is so much room to experiment and make breakfast burritos the way you like them. My kiddos don’t like mushrooms and tomatoes so I make theirs plain with eggs, ham, and cheese. You can also sauté a variety of vegetables instead of mushrooms such as:

  • Finely diced onion
  • Chopped Bell Pepper
  • Hash brown potatoes

Can I Substitute the Ham?

We prefer ham because it reheats really well without much change in flavor. Some proteins like chicken or beef can taste different when reheated. You can substitute the ham with a different protein such as:

  • Cooked breakfast sausage
  • Browned bacon
  • Black beans for a vegetarian burrito

How to Make Breakfast Burritos:

1. Sauté mushrooms, season and remove from frying pan.

2. Whisk together eggs, sour cream, salt, and pepper then stir in chopped ham and sautee in the same pan.

3. Spread 1 Tbsp sour cream in the center of your tortilla and add toppings.

4. Roll the burrito from top to bottom: Pull the top flap down and tuck tightly under the filling. Fold the edges in tightly and roll to seal with the bottom flap.

How to Heat Breakfast Burritos:

Thaw: For best results, we recommend thawing the frozen breakfast burritos completely in the refrigerator overnight, or you can wrap a frozen burrito in a paper towel and microwave for 2 to 2 1/2 minutes on high, turning halfway.

Sauté: Place a large skillet over medium heat and add 2 Tbsp oil. Add thawed burritos, folded-side-down and sauté until golden brown on all sides (2 min per side), turning with tongs.

Stacked breakfast burritos
Freezer friendly breakfast burritos are crisp on the outside and filled with tender scrambled eggs, ham, fresh tomatoes and plenty of cheese. Our go-to breakfast burrito recipe.
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients 

Servings: 6 people
  • 6 medium flour tortillas, (8-inch diameter)
  • 1/2 lb button mushrooms, (8 medium), thinly sliced - optional
  • 1 Tbsp unsalted butter
  • 6 large eggs
  • 1/2 cup sour cream, divided (2 Tbsp for eggs & 1 Tbsp per tortilla)
  • 1/4 tsp sea salt , (or to taste)
  • 1/8 tsp black pepper, (or to taste)
  • 2 oz deli ham, cut into strips or squares, optional
  • 4 oz mozzarella cheese, (1 cup shredded)
  • 1 tomato, diced - optional
  • 3 Tbsp olive oil , to saute (add more as needed)

Instructions

How to Make Breakfast Burrito Filling:

  • In a medium bowl, whisk together 6 eggs with 2 Tbsp sour cream, and salt and pepper to taste. Stir in the strips of ham and set aside.
  • Heat a large skillet over medium heat and add 1 Tbsp oil. Add sliced mushrooms and saute until golden (5 min), stirring occasionally. Season lightly with salt and pepper then remove mushrooms.
  • In the same skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and stir/scramble until the eggs are just cooked through (3 min) don't overcook. Remove from pan and set aside.

Assembling Breakfast Burritos:

  • Spread 1 Tbsp sour cream in the center of a tortilla and top with 1/6 of the cooked eggs, shredded mozzarella cheese, and sauteed mushrooms. Add 1-2 Tbsp diced tomatoes if using*. Don't over-stuff or they will be tough to roll.
  • Roll the burrito from top to bottom: tightly wrap the top flap over the filling, fold the edges in tightly and role to seal with the bottom flap. Repeat with remaining burritos.

To Heat Burritos:

  • Place a large skillet over medium heat with 2 Tbsp oil. Transfer fresh or thawed burritos to the hot pan, folded-side-down, and cook until golden brown on all sides (2 min per side), adding more oil as needed.

Notes

*Skip the tomatoes if planning to freeze breakfast burritos.

      Hi Christine, you could omit the sour cream and it will still work well. You could also add a little bit of heavy cream or half and half (1 Tbsp) to the eggs to add a little moisture.

    These were so so good. Used butter instead of olive oil, I added leftover guacamole to mine, fresh tomatoes to my husband’s. Used Bella/cremini mushrooms because that’s what I had on hand. They were delicious! We had for dinner, but will definitely make again to stuff the freezer.

      If planning to freeze, omit tomatoes on the inside (not absolutely necessary but the texture will be best if you omit before freezing). Wrap each burrito in parchment paper then place multiple burritos in a freezer-safe Ziploc bag. To thaw, microwave each burrito 2 – 2 1/2 minutes on high then sautee per the recipe in step 3 until golden and hot. Enjoy!

    Made these last week for the first time. Delicious! I made them with 1/2 lb. bulk sausage browned first, but followed the rest of the recipe but omitted the mushrooms. I got 8 instead of 6! to eat, I put them in the fridge the evening before to thaw, transport them to work, then microwave for 1 min or so, then toast in a toaster oven to crisp. Solves my issue of not wanting to eat sweet stuff for breakfast! Planning to add some onion and pepper next time. Thanks!

      Hi Melissa, We prefer to eat these fresh. I haven’t tried freezing them to reheat, but I think it could be done. I probably would reheat/bake them in a toaster oven or standard oven, and then, when heated through, toss them on a skillet to get that crisp shell that makes them irresistible.

    Last time I checked, there were 16 TBLSP in 1 cup, which means 1/4 cup = 4 TBLSP. So is it 3 or 4 TBLSP?

      Hi Susan, I can only assume you’re referring to the oil in the recipe? We used 3 TBSP of oil in this recipe. If you’re referring to the sour cream, we used 2 TBSP for the eggs and then 1 TBSP per burrito; this makes 6 burritos.

            You are welcome! It is a great recipe and we are so glad you shared it! I have my hubby on a diet, so I used a very little bit of bacon fat in the frypan to cook turkey bacon to soft for this recipe & drained it: it added a bacon flavour, but only barely covering the pan with the bacon fat, added a lot less calories &yet the bacon flavour. I also used 1/2 low-cal marg & 1/2 butter, which cut some more calories, but kept the flavour. I added soaked sun / oven-dried tomato bits, (I oven-dry plum tomatoes, so 1/2 slices of them or cherry toms work really well) & have frozen & they are still ok – doesn’t add the extra liquid fresh tomatoes do!

            Hi, I know, but 1 cup = 16 TBLSP; ergo, 1/2 cup = 8 TBLSP = 1/4 cup = 4 TBLSP. So I am now guessing it is the 6 TBLSP for your recipe, as I have used that or a little bit less than 1 TBLSP on each burrito as I have my hubby on a diet & that worked very well !! Your recipe gallery is awesome, by the way & I thank you!

      Amanda, We wrap in aluminum foil, thaw overnight, and pop them in the air fryer in the morning still in the foil. Heat until heated through – you can use a thermometer to check.

      Hi Milana, you can reheat in the microwave, but I would sautee before enjoying them, or they won’t maintain their crispy exterior. It’s always better to cook once rather than twice, so the food doesn’t break down or lose quality.

    I just made mine this morning but I only used ground sausage I cooked with onions, scrambled my eggs and then added fresh shredded sharp cheese. Then I put everything together by wrapping all ingredients together and quickly pan frying in butter and olive oil. They turned out beautifully for just making 2. Next time I will try some other ingredients. Natasha, they taste like eggs and meat wrapped in a thin biscuit crust!

    Hi! I made these and the filling was delicious! When I was rolling them up the actual tortilla was breaking and falling apart. I didn’t add a lot of filling (less than what you did) and I used a fresh pack! Did you use raw ones? Mine were cooked/ready to use ones ..

      Hi Luba, it sounds like an issue with the tortillas you were using. make sure you use a fresh package of flour tortillas (not corn tortillas which fall apart) and also don’t overstuff the tortilla or it won’t close properly. You might try larger tortillas. A fresh package of unopened tortillas works best because once you open the package they begin to dry out. Cold tortillas will crack more than room temperature or warm tortillas.

        I would sautee before enjoying them or they won’t maintain their crispy exterior. Also, it’s always better to cook once rather than twice so the food doesn’t break down or lose quality.

    What did I do wrong???? The egg mixture is delicious, the mushrooms perfectly browned, the sour cream smeared and the tortilla ready to roll.

    That’s where it all fell apart – literally. The tortilla cracked with each fold I endeavored, and the egg mixture all over the counter. Cracks and all, I folded it over, everything spilling out and me greatly distressed. But I wrapped the disasters in wax paper anyway and will try to crisp the mess in oil in the morning.

    Has this ever happened to you? My flour tortillas (Azteca) were freshly purchased and opened.

    Sigh.

Perhaps warming them would have prevented them from cracking. The good news is even though they didn’t look perfect like yours, they still were very tasty!

      Love love love your cooking, you bring such joy to the kitchen. Can these be finished or warmed in an airfryer instead of oil on the stove? N if they were going to be frozen n the only option to reheat was a microwave.. would it be better to brown them n then freeze?..         Hi Dorothy, I haven’t tested that in an air fryer but it may work I’d love to know how you like that if you experiment. From frozen we thaw each burrito in the microwave for 2 – 2 1/2 minutes on high then sautee per the recipe in step 3 until golden and hot.

      Hello Janice, I imagine these are best made and eaten fresh. To be honest, I haven’t tried freezing them, but I think it could be done. I probably would reheat/bake them in a toaster oven or standard oven and then toss them on a skillet to get that crisp shell that makes them irresistible.

    I do much of the same thing, but use chorizo instead of ham and add chopped jalapenos for heat. Instead of rolling the tortillas, I simply fold them over in a quesadilla format, wrap with film and freeze for a quick breakfast. I simply thaw them in the microwave for a minute, then put them in a skillet with a little butter and cook to a golden brown on each side.
    Easy to open and add hot sauce if desired and delicious.

        I do vary the contents according to mood. But basically the same as yours except for the meat. Folding the tortilla over like a quesadilla is just simpler than the roll and tuck method you use, plus you do not have a big chunk of tortilla at each end.

          Hi Dawn, I would recommend freezing before browning. You can still heat them without browning but you won’t have that same crispness or effect if you do it ahead of time.

      I updated the recipe with a note on freezing. If planning to freeze, omit tomatoes on the inside (not absolutely necessary but the texture will be best if you omit before freezing). Wrap each burrito in parchment paper then place multiple burritos in a freezer safe ziploc bag. To thaw, microwave each burrito 2 – 2 1/2 minutes on high then sautee per the recipe in step 3 until golden and hot. Enjoy!

        Hi Dana, I have not tried raw tortillas but that isn’t necessary. We just make them like usual and thaw overnight in the fridge then put them on a skillet the next day once they are thawed and they literally taste just as good after being frozen. We just enjoyed them that way today actually.

    Just made this for my boyfriend and I and I absolutely loved them! I changed it by subbing cheddar for mozzarella, bacon for ham, and added spinach and onions and it was terrific. My boyfriend said that this was the best breakfast burrito he has ever had!
    Side note: saw what you said about these being pretty juicy so I made sure all the fillings were relatively dry and had them sit on paper towels if needed as to not add excess moisture.

    I made these for brunch today and they were so tasty! I love the crispy outside and breakfasty insides X) mine didn’t turn out as pretty as yours, but that didn’t stop them from tasting amazing! Thank you!

    Hi, can you make these ahead and freeze them?? I’ve made them once and LOOOOOOOOOOOVE them, but I’m not sure if it’s possible to make them before, unfreeze them and then just put on the pan ..

      I haven’t tried freezing them but I think it would work well. You can probably thaw in the microwave for a minute or two and then brown/ finish heating on a skillet over med/low heat.

    Our menu tonight was breakfast for dinner! This is another Uh MAZING recipe!!! I changed it up a bit though, using all ingredients I have in the house. So, I used Greek Yogurt in place of sour cream, used bacon instead of ham, and omitted the tomatoes. I served it with warm salsa on the side instead. YUMMY! Thank you!!

    Wow, this is amazing, my husband has been making the same exact burritos for me for the past 3 months. Also with Hot Sauce. I am 5 months pregnant. I think it’s the pregnancy cravings! He also varies ingredients depending on what we have on hand. This is why these never get old and I could eat them 3 times a day every day.

      You’re the second person to ask! To be honest, I haven’t tried freezing it so I’m not 100% sure, but if you do freeze them, I’d probably bake them to make sure they are heated through all the way and then toss them on the skillet to crisp on the outside.

    So I made these this morning (I made a mistake o.O)

    I used olive oil in the pan. The olive oil I recently bought has been bitter so the burrito came out semi bitter. I was delicious nonetheless and will try it with other oils.

    Problem is…I gave it to a few guys for breakfast on their way to work. I wonder what they think of me now.. (-.-)

      Oh no! But, I’m sure they’ll look past that and appreciate your yummy burritos ;). Was it an extra virgin olive oil? I tend to stay away from that one for cooking. I love using my extra light olive oil which has a higher smoke point and pretty much no flavor for cooking. I buy it in bulk at Costco.

It’s also really easy to cut down the recipe if you just wanted to make 2 or 3 of them.

        I was looking to freeze them too. Wondering if you should freeze them before frying them in the pan. Assembly would already be done and just thaw & fry. Crisp them up and done. This way, you wouldn’t have to worry about them being soggy.

    I really wanted to make these for a sunday morning breakfast but didn’t have ham or cheese (and too lazy to go out to get any). Still made them but just added more veggies (zucchini, red peppers, onions) with the mushrooms and it was so good! We ate it with salsa and sour cream. Never thought of frying burritos on the stove. Great idea and definitely boyfriend approved. Thanks Natasha!

    I am not a morning person but paradoxically breakfast is my favourite meal of the day! These breakfast burritos are gorgeous! I really have to mix up my Saturday morning pancake routine with these babies. And for the record, I think you have gotta be one of the cutes pregnant mommas I’ve seen. Enjoy stretchy elastics while it lasts ’cause it’s back to skinny jeans soon after. 😉
